Strawberry Mango Streusel Muffins (GF)

Muffin Ingredients:
2 c Organic Almond Flour (fine)
¼ c Organic Coconut Flour
2 tsp Organic Baking Powder
½ tsp Organic Baking Soda
3 tsp Organic Allspice (ground)
3 Organic Large Eggs (room temp)
⅔ c Organic Raw Honey
2 tsp Organic Pure Madagascar Vanilla Extract
½ c Organic Coconut Cream
1 tsp Organic Ginger Rooted (grated)
1 tsp Lemon Juice + Zest
½ c Organic Strawberries Chopped
½ c Organic Mango Chopped
Organic Coconut Baking Spray
Streusel  Ingredients:
½ c Organic Almond Flour (fine)
1 tbsp Organic Coconut Flour
1 tbsp Organic Fine Shredded Coconut
2 tbsp Organic Coconut Oil (melted)
2 tbsp Organic Maple Syrup
1 tbsp Organic Pecans Chopped
1 tbsp Organic Sliced Almonds
¼ c Organic Strawberries Chopped
¼ c Organic Mango Chopped
⅛ tsp Organic Kosher Salt (fine)
Preheat oven to 400 degrees. Prepare muffin tin with liners, spray with organic coconut baking spray, set aside. In a medium bowl mix the dry muffin ingredients together, set aside. In a large bowl mix the wet muffin ingredients together. Using a whisk gently mix the dry ingredients into the wet ingredients. Just until combined, do not over mix. Using a spatula, fold in the diced strawberries, mangoes, and lemon zest. Spoon ⅓ cup of batter into each muffin tin. Bake for 10min. While baking mix all streusel ingredients into a small bowl. After 10min TURN OVEN DOWN to 350 degrees.Remove from oven and sprinkle streusel on top of each muffin, and bake and additional 15-20min using a toothpick inserted into the middle of the muffins to check for doneness. Toothpick should come out clean. Once fully cooked remove from oven and cool on a wire race. ***These should be kept in an airtight container in the fridge for up to 5 days.
